Zucchini, Mushrooms and Sundried Tomatoes Frittatas

Ingredients:

Zucchini: Shredded, 1 cup

Shallots: 2 full sprigs, roughly chopped

Parsley: Chopped, 2 tbsps

Chilli flakes: To taste

Salt and Pepper: To taste

Mushrooms: 5 thinly sliced

Sundried Tomatoes: Chopped randomly, ¼ cup

Eggs: 5, beaten

 

  1. Preheat the oven to 200 deg C
  2. Mix all the ingredients in a bowl
  3. Grease muffin trays lightly with butter or oil and put baking paper in each of them
  4. Pour the mixture into each of the trays
  5. Cook for 15 – 20 mins, till golden brown.
  6. Serve hot
