Upma Kozhukattai – Vegan

Upma Kozhukattai:

Ingredients:

Rice Kurunai ** – 2 cups  (** you get Rice Kurunai in Indian stores. If not, grind Basmati rice to course consistancy)

Grated Coconut – 3/4 cups

Green Chillies – 2 (or to taste) ground to a paste

Curry Leaves – a sprig

Mustard Seeds – 1 tsp

Channa Dal – 1 1/2 tsp

Urad Dal – 1 1/2 tsp

Asafoetida – 1 tsp

Salt – to taste

Oil – for seasoning

Hot Water – 5 to 6 cups.

Finely chopped coriader leaves – 1/2 cup

Heat oil. Season with Mustard seeds; wait until it crackles & add Channa Dal. Once light brown, add Urad Dal & fry until golden brown. Then, add Asafoetida.

Add Curry Leaves & ground chillies paste.

Add water right away. When water is boiling, add salt, coconut, coriander leaves.

Pour the rice kurunai. Cover &  let it cook until the water is absorbed.

Let it cool. Take a handful & roll with your fingers.

Place on lightly oiled plate. Steam.
