MILAGOOTAL (Kerala version of Kootu) – Vegan

200 gms       Any vegetable, tastes nice with White Pumpkin or Chokos or Broccoli or Snake Guard or Spinach or Cabbage, beans, peas & carrot combination, cut into Medium Size

1 cup  freshly grated Coconut

½ tsp Peppercorns

1 to 2 Dry Red Chillies

½ tsp Raw Rice

½ tsp Sambar Powder

2 cups          Cooked & Mashed Toor Dhal

½ tsp Mustard Seeds

1 sprig         Curry Leaves

1 tsp  Coconut Oil to season

Salt    To Taste

1 tsp  Turmeric Powder/Haldi

Boil the vegetables with enough water by adding Salt & Turmeric, until Tender.

Grind Coconut, Peppercorns, Chillies, Raw rice to a smooth & thick paste by adding Water

Add the cooked & Mashed Toor Dhal to the vegetables.

Let it boil for few minutes.

Then, add the ground paste to it.

When boiling, add Mustard Seeds with Urad Dhal to hot coconut oil in a small kadai for season.

When Urad Dhal becomes golden brown, add curry leaves & Sambar Powder. Pour over the Milagootal.
